This post contains affiliate links.  Remember my last freezer cooking session when the temps were low (only mid-80s) for a few days?  I’m so glad that I made those meals.  The kids have a class about 30 minutes away in the late morning on Thursdays, and it’s so nice to be able to just reheat a meal from the freezer when we come home.  Then, in the afternoon, I’m busy completing schoolwork with them that we couldn’t do in the morning.  I don’t have much time to cook dinner, so out comes another freezer meal.  I don’t necessarily like devoting a day to cooking, but I do love the results on busy days.  Here’s our menu plan and meal prep for August 30 2021.

Saturday

Lunch–Blackened Cod, sweet potatoes, roasted cauliflower
Dinner–Pulled pork, brussels sprouts

Sunday

Lunch–Asian Noodles
Dinner–Round roast, potatoes, carrots, green beans

Monday

Lunch–chicken nuggets, french fries, coleslaw

Dinner–Paleo Stuffed Squash, rice

Tuesday

Lunch–Tater Tot Breakfast Casserole (used almond milk instead of dairy), peaches

Dinner–Ginger-Turmeric Chicken Soup, (I loved this!  The kids thought it was just alright and told me maybe it was a meal I should make and put in single serving sizes for myself during the week ;))

Wednesday

Lunch–Pulled pork, baked potatoes, broccoli
Dinner–Beef Pot Pie (using leftover round roast),

Thursday

Lunch–Beef and Veggie Skillet (from my last freezer cooking session)
Dinner–Chicken Enchilada Soup in the Slow Cooker (from my last freezer cooking session)

Friday

Lunch–Taquitos, salad
Dinner–Chicken Apple Sausage, baked potato, broccoli
