My husband is on a bit of a pb & j kick lately, and thanks to our 8 month old not sleeping through the night (she used to; I don’t know what happened!), my husband has been on lunch duty.
Yesterday he made a triple decker peanut butter and jelly sandwich with a layer of bananas in between the pb & j followed by a layer of apple slices between the pb & j on the next level. My husband proclaimed it one of his most delicious creations; my son didn’t agree. He brought home almost the entire sandwich and complained that it was too big to bite into.
He did enjoy the sides of diced apples (with a light salt water wash so they wouldn’t brown) and Chex Mix from Christmas. (Thanks Aunt Barb!) Chex Mix is one of my son’s favorite snacks.
Do you have any creative peanut butter and jelly sandwiches? I think my husband is looking for more ideas. (Hey, at least peanut butter is inexpensive!)

No help with the sandwiches, but I do remember that when my babies started not sleeping through the night at that age, I started giving them some baby cereal before bed. Took care of the problem each time!

the most fun PBJ sandwich ever!! (Shh, don’t tell the person you’re making this for…)
You mix PopRocks into the peanut butter (so they don’t touch the wet jelly, and start popping!), then make the PBJ as usual. The recipient will get a **fun surprise** starting with their first bite!
My 4yo son and I did this for Daddy’s sandwich one time, and he happened to eat lunch that day with his co-workers – hilarious! They’ve called him “PopRocks” ever since:)

Remember peanut butter and Fluff? My son is on that kick right now. Nutella is another good option. Of course, peanut butter and banana. Lastly, have you ever tried cream cheese and jelly? That’s a good sandwich too!
I used to love peanut butter & Fluff! Thanks for the suggestion of cream cheese and jelly. We might have to try that one.
To get my son interested in eating his Peanut Butter sandwich, I would take cookie cutters (or playdoh cutters) and make shapes. For example I would cut out a dog. My son didn’t like jelly, so I would put bananas in it instead. Then using peanut butter as glue, I would use a chocolate chip for the dog’s eye. I even used letter cutters to spell his name. He loved it. It’s a fun surprise to a plain, old, classic!
