We are trying to get away from processed foods. Our lunches, which once used to almost entirely consist of lunch meat sandwiches, have changed to reflect our desire to eat more food made at home.
In today’s lunch is a Lighter Meatloaf sandwich with lettuce, broccoli spears and pineapple.
Some other variations of lunch meat that we like are Cola BBQ and a recent new addition, Crab Cakes. Both of these can be made in advance and stored in the freezer, just like the Lighter Meatloaf. Freezing the food first makes for a lunch that is almost as effortless to make as one using lunch meat, and the freezing does not affect the taste of the meat. Works for me!

Don’t you just love those “bento” boxes. Not sure where the name came from, but for some reason it makes it easier when sending lunch for my kids.
I too avoid lunch meat, but it’s taken a while to come up with some good replacements. I recently found tuna fish in olive oil so that’s been helpful. I also try to cook a whole chicken every Monday so we have chicken on hand for chicken salad.
