We have been packing lots of sandwiches lately for lunches, and while we have experimened with different sandwich fillings to get away from processed lunch meat, sandwiches can still get rather boring sometimes.
Yesterday for lunch my husband packed himself and my son a salad with grapefruit, tomatoes, and cheese with ranch dressing on the side. (Remember those restaurant take out dipping sauces containers I wrote about before? We put them to use again.)
On the side, he packed salsa, nacho chips and apple slices. While this lunch was a hit for both of them, they were both hungry when they came home. Next time some diced chicken on top of the salad would be a good addition.

It looks & sounds yummy but not enough to live on for a whole afternoon indeed. As a veggie I would add kidney beans and corn (on the cob). Aw, now I’m hungry too! 😉
I’ve even done salsa on salads, lol. Yes, something with protein on the salad might give staying power – chickpeas?
