My son is a great fan of breakfast for dinner, so when we had leftover French toast from Sunday, we decided to create a breakfast for lunch.
In his lunch he had two pieces of French toast (made with Vanilla Almond milk, so they were already sweet without syrup), half of a hard boiled egg and mixed fruit.
This lunch, though simple, was a hit.

Oh,. that brings back such memories…my dad was blind and was Mr. Mom way before it was somewhat normal…in the late 60’s…He would make us french toast for breakfast and make extra. He would butter and then add cinnamon and sugar and put it in the refrigerator …we ate it as an afterschool snack cold..I loved it…
