Some people have asked for more freezer cooking plans and reports. The truth is, I have been freezer cooking, just not in the way I typically do.
We have two CSAs. We get one delivery on Tuesday and the other on Saturday. We get a lot of produce, and some of it, like cherry tomatoes and cucumbers, need to be eaten up right away. Other things like kale, Swiss chard, beets, and green peppers, to name a few, freeze well. So, when I have more produce than we can comfortable eat up, I make freezer meals. I have made a lot of freezer meals, and I am beginning to feel a bit like Ma Ingalls on the prairie getting ready for the winter (only I have the comforts of a gas stove, a deep freezer and an air conditioner).
Here is what my kitchen looks like a lot of the time:
And here is some of what I have managed to stock in the freezer in the 8 weeks we have been getting our CSA deliveries.
(We still have 12 more weeks of CSA deliveries, so I imagine by the time it is all over we will have at least two months worth of dinners in the freezer.)
