This post contains affiliate links. As I mentioned earlier this week, I’m on a Paleo-ish diet again thanks to having trouble digesting carbs and sugar. I initially worried that going back to a Paleo way of eating (which is naturally gluten and dairy free) would be difficult within the confines of the WW program. However, I haven’t found that to be true. So, today I’m sharing what I eat in a day on WW Green Plan that is Paleo-ish and gluten free and dairy free.
What I Eat in a Day on WW Green Plan – February 2021
I started with the breakfast I eat almost daily with minor variations:
1/2 c. diced carrots – 0 pts.
apple & pear slices – 0 pts.
2 eggs – 4 pts.
3 Simple Truth breakfast sausages – 3 pts.
Total for Breakfast – 7 pts.
The family had baked tacos (which I can’t eat because I’m intolerant to the corn taco shells), so I had leftovers from the weekend:
Asian mix of enoki mushrooms, Chinese cabbage, and chicken – 2 pts.
1/2 cup diced sweet potatoes – 3 pts.
Total for Lunch – 5 pts.
I had three snacks during the day, two in the afternoon between lunch and dinner (we eat lunch around 11:30 and dinner around 6:30, so it’s a long stretch), and one at night before bed.
I first had a snack of what I call Nut Fudge. It is simply 3/4 cup of Trader Joe’s mixed nut butter, 1/8 cup of maple syrup, 1 tsp of vanilla, and 2 TBSP coconut oil. I separate this into 24 mini muffin molds. Individually, each muffin mold is 2 points, but sometimes, if you eat more than one, the points jump up unevenly. Today, I was hungry, so I had 4 of the mini muffin size.
Total for Snack #1 – 9 pts.
I had a more well-rounded snack for snack #2:
7 Smokehouse Almond Thins (the only flavor I can find without dairy) – 2 pts.
1 apple – 0 pts.
1 Simple Truth Breakfast sausage – 1 pt.
Total for Snack #2 – 3 pts.
Clementines 0 pts.
Total for Snack #3 – 0 pts.
For dinner, we had Paleo Stuffed Pepper Soup. Subbing out regular rice for cauliflower rice makes this super low in points.
Paleo Stuffed Pepper Soup – 3 pts.
1 TBSP Daiya shreds – 1 pt.
Total for Dinner – 4 pts.
I’m allowed 30 points per day and 42 extra points per week.
TOTAL FOR THE DAY: 28 points; 2 rolled over to the next day
