Weight Watchers Mushroom Hamburgers – Dairy Free
I originally found this recipe on food.com. We have made some alterations to suit our tastes (and my 2 year old’s aversion to onions).
4 tsp. olive oil
1 red or yellow pepper, seeded and finely chopped
1 onion, finely chopped (I used onion powder because my 2 y.o. won’t eat onion)
4 tbsp. carrots, minced
4 cups mushrooms, finely chopped
1.5 lbs. extra lean ground beef
2 tbsp. steak sauce (next time I will add a bit more to give them more flavor)
salt and pepper to taste
-Heat oil in a medium nonstick skillet and saute the peppers, onion, carrots and garlic until the onion is translucent, 8 to 10 minutes.
-Add mushrooms and saute until mushrooms are brown and the liquid has evaporated, about 8 minutes.
(Since I didn’t use the onions, I sauteed everything all together for about 8 minutes, skipping a step)
-Cool to room temperature
-Spray broiler rack with nonstick cooking spray and preheat broiler.
-Combine mushroom mixture, beef, steak sauce and salt and pepper.
-Form into 8 burgers
-Broil burgers 3 to 4 inches from heat for 5 to 7 minutes on each side.

That looks really good. I think it’s very possible to eat veggie burgers that offer great taste without nearly as much saturated fat or cholesterol as red meat. As long as some protein could be added, this might be a tasty and nutritious substitute to store bought vegetarian patties.
Yes, and beyond the health benefits, it is a great way to stretch meat too!
