I found a recipe in Healthy Cooking for Vegan Chocolate Chip cookies, but I tinkered with the recipe to come up with a cookie I liked. Here is the result, which all of us find delicious.
Vegan Oatmeal, Raisin Cookies
1.25 cups brown sugar
1/2 cup canola oil
6 tbsp. rice milk
1/4 cup prune juice
2 cups flour
1/2 cup oatmeal
1 tsp. baking soda
3/4 tsp. salt
1/2 cup raisins
1/2 cup walnuts
-In a large bowl, beat the first four ingredients until well blended. Combine the flour, oatmeal, baking soda and salt. Gradually add to sugar mixture and mix well. Stir in raisins and nuts. Refrigerate for one hour.
-Drop by rounded tablespoonful two inches apart. Bake at 375 degrees for 10 to 12 minutes. Enjoy!

Looks good! Surprised to see prune juice there, but I’m sure it’s all been experimented with. Store bought cookies can have tons of not so healthy ingredients, so this seems like a better, healthy alternative.
The original recipe called for applesauce, but we didn’t have that, so I used prune juice. It made them moist, and you couldn’t even tell prune juice was there.
I like the fact that it is dairy free and of course cookies is what I really like.
oh, how i love vegan recipes! my daughter was just saying last night that we haven’t made cookies in a while. we may have to give these a try!
