Thanks to the stomach bug that plagued my husband and I on Thanksgiving day, we had ALOT of leftover turkey.  My husband created this tasty sandwich, which was a big hit with the family on Saturday, after everyone had recovered.  🙂

1 to 1.5 cups of turkey, shredded or cubed
1 Fuji apple, diced
1 – 8 to 10 oz. can of mandarin oranges, drained
¼ cup dried cranberries
1 celery rib, finely chopped
1/3 c. mayonnaise

Turkey Salad Sanwiches

Stir all together until thoroughly combined.  Serve on a whole wheat bun on a bed of lettuce.  Enjoy.
