Thanksgiving Leftovers Diner Style Turkey Sandwich

Our Thanksgiving dinner Thursday was simple but delicious, and we thoroughly enjoyed it.  We made our gluten free, dairy free turkey, gravy and mashed potatoes, and veggie sides, which I shared on our Best Gluten Free, Dairy Free Thanksgiving recipes post.  We literally had just finished the meal when my husband said he wanted to use the Thanksgiving leftovers to make a diner style turkey sandwich.  I had never heard of that before, so he told me what it was, and I whipped it up the next day.  Everyone in the family loved it!

Thanksgiving Leftovers Diner Style Turkey Sandwich

This is so simple to make if you have leftovers.

All you’ll need is leftover turkey, mashed potatoes, and gravy.  You’ll also need a slice of bread.

Simply place the bread on the plate, then layer a hefty slice of turkey, then mashed potatoes, and finally, gravy over all of it.

We were out of mashed potatoes, so I just whipped up some more, and assembled the sandwich.

Final Thoughts

There are so many recipes out there for turkey leftovers, but this simple diner style turkey sandwich was a new twist for us.  My husband and the kids liked it so much, we ate it for two lunches in a row.
