I found this yummy recipe by searching oamc on food.com. I made it for my freezer cooking bout this weekend and we all loved them. They are so moist and tasty, and my kids devoured them. My 2 year old is very fussy, so I am happy to feed her these, and she loved them. Here is my version of the recipe. (I made it dairy free.)
Sweet Potato Waffles
1 cup whole wheat flour
1 cup all-purpose flour
4 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. cloves
2 eggs, separated
1.5 cups Almond milk
1 cup pureed cooked sweet potatoes (I used some of the liquid from steaming the sweet potatoes to help smooth them out when I pureed them)
3 tbsp. oil
1 tbsp. granulated sugar
-In a large bowl, mix together flour, baking powder and spices
-In a separate bowl, whisk together egg yolks, milk, sweet potato, and oil.
-Pour wet ingredients over dry ingredients, stir together until just moistened.
-In a bowl with electric mixer, beat egg whites until soft peaks form; add sugar, beat until stiff peaks form.
-Fold into batter; pour batter onto a heated nonstick lightly greased waffle iron.
-Cook until golden brown until waffle iron stops steaming, about 5 minutes.
-Yield 12 waffles
After freezing, just microwave them for about 30 seconds and then put them in the toaster.

They look yummy! I am going to try this recipe and freeze some for the kids’ breakfasts. I am glad I saw your facebook post about it yesterday and came back to look for the recipe.
