When I talk about freezer cooking or once a month cooking (OAMC) people often tell me they are worried that the food won’t taste good after it comes out of the freezer. However, I find that if you make recipes specifically tailored to freezer cooking, they taste as good as they did when you first put them in the freezer.

The above meal, Stacked Tacos, is a freezer meal, and yet it looks (and tastes) fresh and delicious. This is another recipe I got from 30 Meals in One Day. (This one came out of the Lunch Is Ready cookbook.)

Stacked Tacos

2 lbs. lean ground beef
1 – 15 oz. can tomato sauce
1 – 28 oz. can diced tomatoes
2 cups salsa
1 – 10.75 oz. can tomato soup
1 – 1.25 oz. package taco seasoning

-In a large saucepan, brown ground beef. Drain fat.

-Add remaining ingredients to pan and stir. Let simmer for 1 hour.

-If freezing, place in two Ziploc freezer bags, seal and freeze.

To serve: Thaw and heat up filling. For each serving, cook 3 corn tortillas in hot oil for about 15 seconds on each side. Drain on paper towels.

-Layer hot tortillas, meat, and cheese. Top with lettuce, tomato and avocado.

Note: I am trying to lose weight, so instead of frying the corn tortillas, I broiled flour tortillas in the oven for a minute or two on each side. (Watch this closely! I had to discipline my son while preparing these and came back to a black tortilla and smoke pouring out of the oven. Ooops!!!)

Serves 12, or 6 per Ziploc bag of frozen mixture.
