I was following eMeals‘ Paleo plan, but since my food choices are so limited, I couldn’t make many of the recipes. I decided to switch to the gluten free menu plan, and I haven’t been disappointed. This weekend I made the Skillet Apricot Glazed Tilapia, and it was a big hit with my husband and kids. Best of all, it was so easy to make!
Skillet Apricot Glazed Tilapia
1.5 pounds tilapia fillets, thawed and patted dry
1/2 tsp. salt
1/2 tsp. pepper
2 tsp. canola oil, divided
2 TBSP rice vinegar
2 TBSP gluten free soy sauce
1 TBSP honey
1/2 cup apricot fruit spread
-Sprinkle fish with salt and pepper.
-Heat 1 tsp. oil over medium high heat
-Cook half of fish 3 to 4 minutes on each side until it flakes easily with a fork. Remove from skillet and repeat with remaining fish and oil.
-Combine vinegar, soy sauce, honey, and fruit spread; add to skillet.
-Cook sauce for 2 minutes until it forms a glaze. Spoon over fish.
We served this with green beans and white rice.
