We are all busy, and if you are having a hectic day or two, plan ahead with these two simple meals.

 Meal 1:  Chicken, fries and veggie

In the morning, place 6 chicken breasts in a 9 X 13 pan sprayed with cooking spray.  Pour Italian dressing over the chicken and cover with foil.  Let marinate during the day.

In the evening, place the pan of chicken with the foil still on top in the oven and bake for 350 for 30 to 40 minutes until chicken is no longer pink.  Cook frozen French fries alongside in the oven or make a starch and serve a veggie.  Reserve two chicken breasts for tomorrow night’s dinner.

 Meal 2:  Chicken & Bacon salad

Chop up the chicken in bite size pieces and cook up two slices of bacon per person.  Arrange bowls of greens and top with the chicken and bacon and cheese.  Serve.

If you intentionally make leftovers and then repurpose them into a meal for the next day, you can save yourself some time in the kitchen.  Another intentional leftover duo is Pizza Rolls and Beef Pizza.
