We got A LOT of Swiss chard in the CSA basket this week, so this recipe, inspired by one in Cooking Light was perfect for us.
Sausage Potato Hash with Swiss Chard and Eggs
3 potatoes, diced small
1 tbsp. olive oil
1 leek, chopped
3 tsp. minced garlic
1 large bunch Swiss Chard
dash salt and pepper
4 eggs
4 sausage patties, cooked and cubed
Directions
Add olive oil to the pan and let warm up for a minute or two.
Add the potatoes and cook over medium for 15 to 20 minutes, until the potatoes soften, stirring occasionally. (Covering the pan can make them cook faster.)
Add the leek and cook for another 5 to 10 minutes, until the leek softens.
Add the garlic and Swiss chard, cooking until the Swiss chard is wilted. Add the dash of salt and pepper.
In a separate pan, poach the 4 eggs.
Add the sausage patties to the Swiss chard mixture and cook until warmed through.
Serve the eggs over the top of the Swiss chard mixture.
Serves 4.
