When my family and I attended the Gluten and Allergen Free Expo a few weeks ago, we all enjoyed the chocolate from PASCHA Chocolate.  If you’re dairy or gluten or nut free, you know how hard it can find good quality chocolate that tastes good AND is safe to eat.

PASCHA was created by Simon Lester, a chocolatier.  However, two of his daughters have life threatening allergies, and he himself is allergic to milk and nuts.  He set out to create a chocolate that was delicious and pure, which would be safe for his daughters.  The result is PASCHA.

What PASCHA Chocolate Offers

PASCHA Chocolate is made in a facility that is dedicated allergen free of the top 8 allergies–peanuts, nuts, dairy, soy, eggs, wheat and gluten.  The chocolate is made with fine aroma cocoa beans and they offer full ingredient traceability.  In addition, the chocolate does not include any genetically modified ingredients, and it’s vegan.

Currently PASCHA Chocolate offers 5 different varieties of chocolate:

If you’re longing for traditional chocolate, this is your bar.  It has only 4 ingredients–organic sugar, organic cocoa mass, organic cocoa butter and organic vanilla.  This is the sweetest of all the varieties of chocolate that they offer.  It’s not creamy like traditional chocolate, but it’s not sugary sweet either.

55% Cacao with Goldenberries

This is a sweet chocolate with goldenberries embedded which are sour and seedy by themselves.  However together with the chocolate, they form a nice mixture of sweet and sour.  If you don’t like too sweet chocolate, this is a nice blend, and it’s a different blend then you have probably ever tried before.

55% Cacao with Cocoa Nibs

This was my husband’s favorite because it wasn’t as sweet as the regular 55% cacoa.  It was a bit more bitter, which he enjoyed.  We could taste more chocolate and the nibs give the bar a complex texture.  The kids loved the crunchy flavor and texture.

70% Cacao

This was my favorite.  It was not sweet and had a rich, strong chocolate flavor.  To me, this was chocolate perfection.  Smooth and just the right amount of chocolate taste.

85% cacao

For those watching their sugar intake, this is the chocolate for you.  10 pieces only have 7 grams of sugar.  This one has a pure chocolate taste, which my husband described as bitter and sour.  It’s an acquired taste, but it is the best chocolate to eat for your health.

PASCHA Chocolate is currently for sale on their website.  You can order in batches of 5 bars.  The more bars you buy, the lower the price per bar becomes.

If you order 15 or more bars, shipping is free.  And you can order the chocolate in the summer because when it’s hot, the chocolate is carefully shipped in insulated material.
