This semester, we’re going to be insanely busy. In addition to our normal homeschool work, the kids are involved in two co-ops. One meets for 4 hours one day a week. There, Bookworm will take hockey, art, and calligraphy. The girls will take gymnastics, art, and ballet. I love this co-op because it’s a frugal way for me to get my kids involved in extra curricular activities that we otherwise couldn’t afford. Plus, I get to take all of the kids at once, so we’re not driving all over the place.
The second co-op is on a different day, and we also attend for four hours. This one is more academic. All three kids are taking Spanish, and then the girls are taking a history arts & crafts class as well as a regular art class. Bookworm is taking a history class and another art class.
Then we have PE and park day another day of the week.
Oh, but that’s not all. The kids have just joined our church’s choir, and Bookworm is taking 4-H archery, photography, and civics. Whew!
So, I knew this semester I’d have to be ultra-organized to pull this all off without going insane.
While my mom was here, my husband and I had several freezer cooking sessions that were a few hours long. This is what we ended up with:
Amazing Beef Stew x4 (I’m not adding the meat to the bag because I want to brown it on cooking day.)
Slow Cooker Honey Garlic Chicken x8 (the serving size is small, so I’m x8 the recipe to make 3 meals for our family)
Chicken Breasts Made Two Ways x2 (making one of each type, and dividing each into two meals
If we use these meals on the three days we’re most busy, we now have enough meals in the freezer to last us over three months. Woo hoo!
