One of my children has been recently diagnosed with irritable bowel. The doctor recommended that she either go on the Specific Carbohydrate Diet or the Paleo AIP diet for at least 8 weeks. I researched both, but in the end I decided on the Paleo AIP diet because I’m more familiar with it, and it seemed easier to implement into our lifestyle.
This weekend, I’m having a small, Paleo AIP freezer cooking session. My plan is to make 3 or 4 different meals and pack them in single serving portions so it will be easier to feed her compliant food on busy days. This will also save me from having to make two meals each lunch and dinner (one for her and one for the family).
Here are the recipes I’m planning on making:
Vegetable Beef Soup (To make this AIP compliant, I’ll be substituting the tomatoes and green beans with veggies that are AIP approved. I’ll also omit the pepper and use ground beef meatballs instead.)
AIP Paleo Apple and Sage Elk Meatloaf (I’ll make this with ground beef instead because that’s what we have on hand)
