It seems like a dichotomy doesn’t it–pantry challenge and freezer cooking? Well, perhaps it is, but now that both my daughter and I are on a dairy free diet, I find we often don’t have things to eat at lunchtime. While my daughter may be happy eating peanut butter and jelly for every.single.lunch, I am not. Also, I think my daughter’s diet is severely lacking, so I am trying to make more meals with hidden veggies. So, based on pantry items, I am planning a freezer cooking bout this weekend. Here is what is on the agenda:

As far as freezer cooking plans go, this one is fairly light, but I do still have freezer meals to use up for the pantry challenge. This freezer cooking bout is just to get us through until the pantry challenge is over.

Have you found a good website that lists freezable foods? I would love to do freezer cooking but sometimes it’s hard to get ideas and if I have to do too much searching the twins usually distract me before I can get many ideas.

Any special instructions for reheating the french fries? We don’t really care for frozen fries, so I usually make seasoned potato wedges (oil + seasonings). I never thought to freeze them, though.

I cook them up on the day I prepare them at about 425 until tender. Then, when they are cool, I bag them and freeze them. On the day I am using them, I reheat them at about 425 for 10 to 15 minutes, until heated through.

The sweet potato waffles look good! My boys love waffles and I would like to try some new recipes. 🙂 The orange puree looks good too. I would love to get more vegetables in our diets…
