I’m someone who likes to constantly try new recipes, but lately I’ve been stuck in a rut of making the same meals.

Last night, my family made the Moroccan Ground Beef with Zucchini and Tomatoes, and it was a hit! (My non-Paleo family members mixed white rice in with the meal, but I found it delicious and filling on its own.)
Moroccan Ground Beef with Zucchini and Tomatoes
1.5 lbs. grass-fed ground beef
1 medium onion, chopped
2 cloves garlic, minced
2 tsp. ground cumin
2 tsp. ground coriander (optional)
1 TBSP chopped fresh thyme
1 tsp. salt, 1 tsp. pepper
2 zucchinis, chopped
1 (14.5 oz. can tomatoes)
-Heat a large, non-stick skillet over medium-high heat.
-Add ground beef, onion, garlic, cumin, coriander, thyme, salt, and pepper to skillet; cook 5 to 10 minutes or until beef is no longer pink, stirring to crumble.
-Add zucchini and tomatoes; cook 5 minutes until zucchini is tender. Serves 4.
I had all of the veggies chopped before I went to pick up my husband. When we got home, this meal came together in less than 20 minutes! Love that!
