I have quite a few sweet potatoes to use up from my organic produce delivery a few weeks ago, so Monday’s recipe is an experiment using them.  Also, I have been watching Dr. Fuhrman explain the nutritarian lifestyle, and I am inpired to try to include more recipes packed with veggies in our diet.  Here is the plan for the week:

Monday–Chef AJ’s Sweet Potato Nachos, Salad

Tuesday–Tuscan Bean Soup, Salad, Whole Wheat Bread

Wednesday–Beef Pot Roast with potatoes and carrots

Thursday–Black Bean & Butternut Squash Chili (this was a recipe in the latest edition of AllYou)

Friday–Spaghetti with meatballs, garlic bread, salad

Saturday–Thai Style Turkey over rice, mixed veggies

Sunday–Ham and Bean Soup, Salad

Lunches will be leftovers or sandwiches.

Breakfasts will be fruits and smoothies, granola bars, omelettes, and homemade pancakes

I am also planning to make the following snacks this week:

Pumpkin Pecan Oat Squares

Yummy Banana Oat Bars
