Our CSA is winding down. One of them only has one more delivery, the other, two. That means soon I won’t be doing much cooking as we use up our freezer meals from the summer, but for now, I am still spending some time cooking. Here is the plan:
Sunday – Spare Ribs, homemade french fries, Acorn Squash Slices
Monday – Chicken in the crockpot, diced potatoes, green beans
Tuesday – Pulled chicken sandwiches, nacho strips, carrot slices
Wednesday – Mexican Chicken and Bean Soup (recipe coming soon), guacamole and nacho chips
Thursday – Cabbage and Beef Soup with Beans (from the freezer), bread for the family
Friday – Sloppy Joes (from the freezer), zucchini patties
I don’t yet know what we are having for the weekend. It will depend in part on what comes in our last Saturday CSA basket as well as whether I can finally add carbs back into my diet. I meet with the doctor on Wednesday and am hoping that my restrictive diet will become a little less restrictive. Four weeks without any carbs except a few beans is challenging, but I have almost been on this diet that long.
