This is going to be a very busy week as I contine to try to check things off my Goal List before I return to work. I only have about 6 weeks left before I return to work, and I am frantically trying to get everything done. So, this week my recipes are all slow cooker recipes. (I love the slow cooker!!)
Monday–Crockery Pot Meatballs (I plan to double this recipe and freeze one portion for a later meal)
Tuesday–Impossibly Easy Sweet Pulled Pork (served with lettuce in a burrito)
Wednesday–Slow Cooker Beans & Rice (I will also double this one and freeze one portion)
Thursday–Vegetarian Hearty Soup
Friday–Emily’s Mongolian Beef in the Slow Cooker
Saturday–Unstuffed Cabbage Roll Soup
Sunday–grilling salmon & polish sausage

Love the crockpot doubling idea! Do you grill your salmon on a gas grill or charcoal?
We grill on charcoal. We have never actually grilled salmon before, so it will be an experiment. I bought my husband some grill wood planks for Father's Day (for 99 cents), so we are going to experiment with those.
Ooooh I'm going to try that Mongolian beef recipe. Hooray for crockpots!
Great slow cooker recipes! I just got a new 6 qt. slow cooker and will have to give these a try!

I think many people have a tendency to overcook salmon on the grill. We definitely prefer ours somewhat "rare." It will continue to cook after being removed from the heat, so I suggest that you allow for that. We tend to grill salmon more than just about any other fish because we enjoy it so many different ways. Have fun!
