This post contains affiliate links.  As I mentioned a few weeks ago, I’ve revamped the kids’ snack schedule so they get a wider variety of snacks including fruit and protein so it’s not just carbs, carbs, carbs.  Our meal prep this week reflects that.

Dinner–Miso Marinated Pork, sweet potatoes, asparagus

Monday

Lunch–Take out

Korean Beef

Dinner–Bookworm Cooked!  Korean Beef (from The Everything Gluten Free, Dairy Free Cookbook), rice, sauteed baby bok choy, sweet potatoes

Tuesday

Lunch–Collard Greens with Bacon, chicken, chips, carrot sticks
Dinner–leftovers

Wednesday

Lunch–Smoked Sausage & Black Beans (4th recipe down on the link), rice,

Dinner–Taquitos, refried beans, salad

Thursday

Lunch–spaghetti with ground beef & mushrooms
Dinner–Paleo Meatloaf, carrots, peas, baked potatoes

Friday

Lunch–Seafood Nachos, Salad
Dinner–Mexican Skillet (we loved this, and the kids didn’t even know it had cauliflower rice!), nacho chips
