Bookworm and I got our most recent food intolerance tests back, and it wasn’t pretty. I have an appointment with the doctor next week to discuss the results, so I won’t share here until after I meet with him.
When I was on my path to healing, I followed the Paleo Auto Immune Protocol diet, and I had great success. But sometime last October when we went to Boston, I fell off the Paleo bandwagon. I never did go back to eating dairy and gluten, but I ate a lot of other stuff that I shouldn’t have, which is probably part of the reason why my healing has taken such a huge backward slide.
Now, I’m planning on following the Auto Immune Protocol again, and I’m taking my family along for the ride. I’m tired of making meals for myself and meals for them. Of course, the kids and my husband will still eat rice and some other non-gluten grains, but menu-wise, we’ll all be eating the same thing.
Here’s the plan:
Saturday–Kale, Sweet Potato, and Carrot soup and sliced ham
Sunday–Ham and cabbage, roasted root vegetables
Monday—Magic Chili (making a double batch so one meal can go in the freezer)
Tuesday–Grilled chicken thighs and Avocado Sweet Potato Salad
Wednesday—The Best Tomato-less Spaghetti Sauce with gf pasta for the family and spaghetti squash for me
Thursday—Tomato-less Pasta Fagioli (with turkey meatballs instead of beans and gf pasta for the family–mine without pasta)
Friday—Baked Salmon with Kale and Cabbage

I can completely relate about cooking several meals! It gets old fast.
Yes, we’ve all been eating the same thing for a few days, and it’s much nicer.
Yum – the sweet potato avocado salad sounds really good! And I hear you too on the multiple meal planning thing. I’m vegetarian, so I regularly end up cooking multiple meals, but I’m trying to do better with my planning and make things that everyone can eat (even if it means taking a bit out of the pot before adding the meat for myself).
We made the sweet potato avocado salad last night, and it was great! It must be tough to be a vegetarian in a home of carnivores!
