Yes, I am a little behind on my menu plan. 🙂 I like to do my menu planning on Sunday, but our CSA doesn’t update us until Monday night or Tuesday what we will get in our CSA basket on Tuesday, so a lot of the time I am flying by the seat of my pants, so to speak. Until the CSA is over in October, my menu plan will be available when I find out what we are getting and decide on recipes, whenever that may be.

Chicken Apple Sausage, Kale and Rice Soup
Friday
Honey Dijon Chicken Breasts, Glazed Baby Carrots Dijonaise, Caramelized Onions and Beet Greens
Saturday
Beef & Red and Yellow Pepper & Zucchini Stir Fry (hubby’s creation)
Sunday
Homemade Enchiladas, Salad, Island Guacamole
Monday
Stove-Top Zucchini and Ground Beef Skillet
Tuesday
Potato Chili, Cucumbers,
Meal for the Freezer
Swiss Chard and Penne Pasta (will use gluten free pasta and add it right before we eat the meal)
