Somehow, we went through the entire month’s grocery budget already.  Yep, already, and there are still almost 2 weeks left in the month.  Things are gonna get interesting around here.  Meanwhile I will remind myself next month to set a more realistic grocery budget.

Here is the plan for the week:

For the Family (Dairy Free and Gluten Free)

(My plan is to double some of the soup/chili recipes so we will also have some meals to stretch us through next week.)

Lunch–leftover potato soup with bacon
Dinner–Quick Veggie Bake

Lunch–Chicken Breast, rice and carrot sticks
Dinner–Chicken Enchiladas, Guacamole, lettuce & tomato

Southwestern Pork Chili, Old Fashioned Corn Bread

Gluten Free Chicken Pot Pie (recipe coming soon)

Fried Cabbage with Bacon, Onion & Garlic

Easy Beef Chili, leftover cornbread

Seafood & Tomato Chowder

(I apologize for the lack of links.  I am trying out several cookbooks and hope to be able to share recipes soon!)

My Plan (Paleo Auto Immune)

I’m continuing through an elimination diet to see if I might have a histamine intolerance which could be the reason my throat sometimes swells and I’m frequently dizzy.  (Physically, not that I am dizzy mentally, at least not all the time!)

I’m also rotating food to avoid any more food intolerances.  Because of the food intolerances, rotations and elimination for histamine, my food choices are getting narrower.

This week I will be having:

Bison, lamb, salmon, cabbage, Swiss chard, sweet potatoes, and peaches.
