It’s been a crazy weekend, so I’m getting this up later than normal.  Here’s our plan for the week:

For the family (Gluten Free & Dairy Free):

Sunday–Chicken Enchiladas, Guacamole, Salad

Monday–Beef Tacos, Guacamole, Salad

Tuesday–Linguine with Swiss Chard, Tomatoes and Bacon

Wednesday–Tuna Melts, diced carrots, homemade french fries

Thursday–Skillet Macaroni with Swiss Chard

Friday–One Pot Stuffed Pepper Soup

For the freezer, I plan on adding the following:

Beet Pancakes

Blanched, diced carrots

Beef Taco filling (I’ll double it for dinner on Monday and freeze one portion)

Spaghetti Sauce with Beef (I made a ton of Jamie Oliver spaghetti sauce last month, but it has red pepper in and I just found out Bookworm is intolerant to red pepper, so it’s good to make a few basic batches of tomato sauce.)
