Wow!  All of the sudden, my kids can eat A LOT, especially the older two who are 11.5 and 7.  Yikes!  No longer can we have lunches that are simply small bits of leftovers that are in the refrigerator.  Nope.  Now, I need to start planning our lunches, too, and buying the appropriate groceries.

Sweet story, though.  My son is an altar server at church, and he’s always filling in on the fly when they don’t have altar servers available and he’s not scheduled.  This week, one of the nuns gave him a $10 gift certificate to the local grocery store as a thank you.  He promptly handed over to me and said, “Here’s a little bit for you to help keep me full.”  🙂  So sweet.

I can’t wait to see how tall this kid will be!

Lunch–beef and broccoli stir fry
Dinner–slow cooker beef stew


Lunch–leftovers (DH grilled on New Year’s Day, so we have lots of leftovers)
Dinner–Garlic Honey Ginger Glazed Salmon, roasted cauliflower, diced potato cubes


Lunch–Slow Cooker Sloppy Joes over baked, diced potatoes, broccoli
Dinner–Chili with black beans (Bookworm and I can’t eat beans anymore.  I found this freezer meal when inventorying the freezer yesterday, so my mom, husband and other two kids will eat it up.  After this, most of our meals will be Paleo.)


Dinner–Paleo Egg Roll in a Bowl (adding cooked ground beef)


Lunch–Paleo Taco Skillet
Dinner–Simple Salisbury Steak (I’ll make my own gravy with broth), mashed potatoes, corn


Lunch–Moroccan Ground Beef with Zucchini and Tomatoes
Dinner–Italian Sausage Potato Quick Skillet Meal


Lunch–Kung Pao Chicken, rice (for the kids)
Dinner–leftovers or TBD
