Let me tell you, January is packing a punch so far.  I’m pretty much over my nine day sickness, but my mom, who is visiting and started to feel bad around the same time I did, found out on Thursday that she has shingles!

We’ve been driving her to urgent care and also an opthalmologist since the shingles is in both her ear and her eye.  She’s on medicine, but she’s not turned the corner yet.  For that reason, I’m planning super simple meals this week.  I don’t know how many more doctors appointments we’ll have to go to before this is all over.

Also, I’m trying to pick meals that are naturally MyWW Purple Plan Friendly since I need life to be easy right now.


Sheet Pan Chicken Fajitas, (We had these with brown rice tortillas.  We’ll definitely make these again, but next time, we’ll have it over brown rice and with black beans.  Delicious!)
