We start homeschooling on Monday, which also coincides with the first day of Bookworm’s soccer practice. (Doesn’t it always seem to happen like that?)
I anticipate being very busy (big surprise, huh?).
This weekend I’m going to prepare a few meals for the freezer so on those crazy days, we’ll still have food to eat.
Weekend Freezer Cooking Plan
Southwestern Beef (to eat by itself or in tacos)
Hamburgers x 12
Eggplant Burgers (We have so many of these now we’ll probably be eating them into December. Hope the CSA slows down on the eggplants soon!)
Menu Planning for the Week
I’m saving the freezer meals for a bit later in the month. We’re only starting with a half load of school this week, so I should have a little time. Next week, however, will be a different story! This week, it’s going to be all about the slow cooker while using up all the CSA bounty
Saturday: Southwestern Chuck Roast (extra will go in the freezer for busy nights), beet greens & Swiss chard sautee
Sunday: Something husband will put together
Monday: Chicken Cacciatore over Rice
Tuesday: Chicken, Vegetable, Pineapple Skillet with Rice
Wednesday: Zucchini Quiche Muffins with Fruit (Bookworm & I will have Bacon Wrapped Turkey Tenderloins since we can’t eat eggs)
Thursday: Beans and Bacon (Bookworm & I will have something different as we can’t have beans)
