This post contains affiliate links. If you don’t normally garden, are you planning on gardening this year? Here in Tucson, our gardening season starts in October and winds up about now. My husband planted a garden this winter, and we’ve been enjoying beets, lettuce and Swiss chard. Right now the lettuce is abundant, so I have some salads on this week’s meal plan. Also, our Farmbox subscription has had a lot of zucchini in it, so you’ll see many zucchini based recipes on the menu.

Lunch-Turkey & Zucchini Burgers, rice, peas (these burgers were so moist and yummy, they’re definitely going on the regular rotation!)
Dinner-Ultimate Garlic Pork Loin Roast, diced potatoes, carrots & golden beets, sweet potatoes
Dinner-Chalupa Salad, guacamole
Dinner-White Turkey Chili, salad
Lunch-BLT Salad, orange & apple slices
