We have a lot of root veggies in our pantry and spinach in our refrigerator that have accumulated from our fall CSA, so this week, I’m determined to make a dent in the stash.  Here’s the plan:

Monday–Polish sausage, carrot sticks, rice

TuesdayHamburger Vegetable Soup

WednesdayChicken & Spinach Soup with Fresh Pesto (minus the beans because we’re intolerant & with GF croutons I’ll make)

ThursdayLeek, Potato & Spinach Soup (minus the beans)

Friday–Ham & Cabbage Sautee

Saturday
Lunch–Burger patties, roasted turnips and butternut squash fries
DinnerStuffed Acorn Sqush
