My son is going back to school on Monday, so I am planning an impromptu freezer cooking day today to make some goodies for his lunch and to get some meals in the freezer both for our dinners and his and my husband’s lunches. Here is what I am planning to make for the freezer cooking bout:
And, for our meals this week, I will be making the following:
Monday–Apple Glazed Pork Chops, mixed veggies
Tuesday–Easy Baked Ziti, green beans, garlic bread
Wednesday–BBQ Chicken Pizza, spinach
Thursday–Lemon Herb Grilled Chicken, broccoli, baked potato
Friday–BBQ Chicken Baked Potatoes
Sunday–a leftover freezer meal I still have in the freezer
Several of the recipes I have planned this week require BBQ sauce, but all of the commercial brands have soy in them, so I am going to try this barbecue sauce recipe and try to make it homemade.
Lunches will be leftovers and sandwiches along with fruits and veggies.
Breakfasts will be eggs, omelettes, breakfast mueseli, oatmeal, and smoothies.
