I bought a ham on sale before Christmas, so this week I am cooking it up and planning to use the leftovers in several different meals.
Monday–Baked Ham, Mashed Potatoes (with homemade chicken broth) and veggie
Tuesday–Vegetable Barley Soup (with ham)
Wednesday–Southwest White Bean Stew
Thursday–leftovers
Friday–Pork Chops with Blueberry BBQ sauce (this is an experiment my husband wants to try; I’ll let you know how it turns out!)
Saturday–Chicken Tacos & Refried Beans and Mexican Style Rice
Sunday–dinner out
Breakfasts will be breakfast sandwiches, omelettes, toast, oatmeal, fruit, etc.
Lunches will be leftovers or peanut butter and jelly or ham sandwiches.

I have been reading your blog for a long time now and I was just thinking the other day how far it has come. Great menu! I love making one large item like a ham, roasts, etc. and then making a bunch of new meals out of them over several days, huge timesaver!
