This post contains affiliate links.  This menu plan is from last week when we tagged along for my husband’s conference in Philadelphia.  We were out of town Saturday through Monday, so you might notice that we ate out a lot and ate a lot of convenience foods, which isn’t our normal way of eating.  🙂

Here’s our meal plan and menu prep for September 26 2022:

Meal Prep

All I prepared for the trip was some Banana Muffins that we ate for snacks in the hotel room.

Saturday

Lunch–Sandwiches, chips, carrot sticks
Dinner–Maya Kaimal Everyday Dal, Basmati rice (these were easy to microwave in the hotel)

Sunday

Lunch–Chipotle
Dinner–chicken apple sausage, rice, cucumber slices

Monday

Lunch–sandwiches, chips, apple slices
Dinner–Chipotle

Tuesday

Lunch–chicken nuggets, fries, carrot sticks
Dinner–Trader Joe’s tamales, Mexican rice,

Wednesday

Lunch–Homemade Pizza with GF Pita Bread, Daiya Cheese & Bacon, peas
Dinner–Cheeseburger Soup

Gluten Free Dairy Free Cheeseburger Soup

Thursday

Lunch–leftover Cheeseburger Soup
Dinner–One Pot Mexican Rice Casserole (using the leftover Mexican rice)

Friday

Lunch–leftover Cheeseburger Soup
Dinner–leftover One Pot Mexican Rice Casserole
