This post contains affiliate links.  I’m trying to get back in the habit of using the slow cooker for nights that we’re busy.  However, I have to get better and planning ahead and putting the ingredients in the slow cooker in the morning.  Too often, I start with school with the girls, then we get busy and go away, and I come home right at dinner time.  Not a good plan.  🙂  Here’s our menu plan & meal prep for October 3 2022:

Lunch–Chicken Fried Rice, Feel Good Foods Egg Roll,
Dinner–Tacos, lettuce & tomato


Lunch–grilled cheese sandwiches, chips, cucumber slices
Dinner–Slow Cooker Chicken Enchilada Soup, salad


Lunch–leftover Chicken Enchilada Soup
Dinner–Winter Kale Vegetable Soup, bread with butter


Lunch–pita pizzas, peas
Dinner–Mushroom Chicken, Mashed Potatoes, green beans
