This post contains affiliate links.  I hope where you are, you’re beginning to enjoy some spring like weather!  We’re enjoying temps in the 70s and 80s, but within the next six weeks we will probably be in the 90s or higher.  The kids and I are trying to take advantage of the nice weather before things really heat up here.

Here’s our meal prep and menu plan for the week:

Dinner–Steak, Veggies, Asian Noodles

Monday

Lunch–Chicken Nuggets, Broccoli, leftovers
Dinner–Shepherd’s Pie

Tuesday

Lunch–Taco Rice, guacamole, chips, carrot sticks, sugar snap peas
Dinner–Chili, rolls

Wednesday

Lunch–Paleo Shepherd’s Pie, leftover chili
Dinner–Monte Cristo Sandwiches, salad, leftovers (Cuddle Bug cooked!)

Thursday

Lunch–Pulled pork, chips, snow peas & baby carrots
Dinner–Chicken Rice Soup (without the milk), salad

Friday

Lunch–Tuna Noodle Casserole, cucumber slices
Dinner–Fish Sticks, Daiya Mac & Cheese, Coleslaw, Blueberries
