This post contains affiliate links.  I did something different with meal prep this week.  I made a few snacks for the kids, but then I used the cookbook, Cook Once, Eat All Week, to prep the ingredients for three meals for the week.  The idea, which I hope works, is that I then can pull the meal together quickly, in 15 minutes or less.

  • Texas Beef Chili,
  • Asian Beef Lettuce Cups, and
  • Italian Wedding Soup (all recipes for Week 21 in Cook Once, Eat All Week)

Sunday

Lunch–Veggie Stir Fry & Okinamiyaki
Dinner–Pork loin, potatoes, broccoli

Monday
Lunch–Daiya burritos, salad
Dinner–Chicken, broccoli, baked potatoes

Tuesday
Lunch–Italian Wedding Soup (from Cook Once, Eat All Week)

Dinner–Spaghetti w/ Meat Sauce, salad

Wednesday
Lunch–Chili (from Cook Once, Eat All Week), Corn Cakes,

Dinner–Breakfast for Dinner–Waffles, Omelette, Pork, Blueberry/Strawberry Smoothie

Thursday
Lunch–Asian Lettuce Cups ((from Cook Once, Eat All Week), rice
Dinner–leftovers

Friday
Lunch–Chicken Tacos, lettuce, tomato
Dinner–Chicken Salad with Honey Mustard dressing, leftover Corn Cakes
