This post contains affiliate links.  This is what we ate last week, when we were still recovering from COVID and then moving.  We ate A LOT of convenience foods.  I know many families love convenience foods more than home cooking, but not my family.  Suffice it to say, the convenience foods didn’t fill them up, and they kept asking when I could start cooking again.  Luckily, the kitchen is finally unpacked and in working order, and I’m feeling good, so next week we should be back to home cooked meals.  Here’s our menu plan and meal prep for August 15 2022:

Absolutely no meal prep.  I was lucky last week to even microwave food to give to my family.

Lunch–chicken apple sausage, toast, apple slices
Dinner–sloppy joes (I brought this with me from Arizona from my last freezer cooking session), diced potatoes, cucumber slices

Lunch–leftovers
Dinner–breakfast for dinner

Monday

Lunch–Trader Joe’s chicken nuggets, french fries, cucumber slices
Dinner–meatloaf (I brought this with me from Arizona from my last freezer cooking session), rice, carrot sticks

Tuesday

Lunch–Chipotle burrito bowls,
Dinner–Daiya Santa Fe burritos, grapes

Wednesday

Lunch–Chicken meatballs, french fries, peas
Dinner–leftovers

Thursday

Lunch–Grilled cheese, chips, cucumber slices
Dinner–Chicken patties, rice, salad

Friday

Lunch–Spaghetti with meatballs, salad
Dinner–Taco Salad/Tacos
