We’re back to our 45 minute, one way drive, four days a week for ABA for one child.  (Each session is 6 hours.)  The other child also goes some of these days plus a separate day, meaning I’m out of the house as if I worked full-time, five days a week.

In some ways, I don’t mind because the investment in our children’s future and the improvements that we are seeing make it worthwhile to continue, but I’m also falling behind on everything!

So, this weekend I decided to make some meals and snacks ahead of time so that we have things to eat this week and the kids and I have snacks during the day when we’re gone all day.

Here’s what I’m planning on making:


Flourless Peanut Butter Chocolate Chip Mini Blender Muffins

Trail Mix Granola Bars

Irresistible Moist Gluten Free Banana Bars

Gluten Free, Dairy Free Brownies


Southwest Beans and Rice (I’m making this for a potluck we’re going to this weekend, but I’ll also make a second one that I can pack in the kids’ lunches during the week.  Hopefully I can publish the recipe here soon.)

Taco Meat (I used this last week for salad lunches for me, and I want several single-size serving packs in the freezer for easy lunch packing.)

Beef & Butternut Squash Stew

Paleo Chili
