The girls wanted to try gymnastics, so that will be happening one night a week.  I’m really excited to see how they like it.  Also, they’ll be going to American Heritage Girls one night a week, so I’m glad to make some meals on Sunday so I don’t have to cook on those nights we’re busy and away from home.

Yesterday, I made several items for the week:


Sausage and Egg Casserole  (I plan to pack this for the kids’ lunches for a few days)

Cheeseburger Soup (I left out the bread on top and made this with plain almond milk and Daiya cheese.  It looks great, so I can’t wait to try it tonight!)

Easy Baked Chicken & Peppers (This is my lunch and my husband’s during the week.)


Best Ever Chocolate Oatmeal No Bake Bars (I’ve made these before, and the kids love them, but they’re a bit messy to eat in the car.  This time, I didn’t melt the chocolate in them, and I put each individual serving in a cup cake liner)

Blueberry Baked Oatmeal (I made a regular version for the family, and a sugar free option for me in the muffin form)

Date and Walnut Treat (This simply has 5 to 6 soaked dates, 1/2 cup walnuts, 1 tbsp. coconut flour, 2 tbsp. carob or cocoa, and 1 tbsp. nut butter mixed together in a food processor.  It’s a yummy, clean, sugar free treat.)
