Since this is Thanksgiving week, I went easy on the meal prep. I was running out of low point, oatmeal based muffins, so I made a few dozen, and I also made a snack cake for the girls.
We should be able to pick up our turkey tomorrow, so we want to make sure we have enough room in the refrigerator, so I didn’t make any meals ahead. (All space is precious at this point!)

Slow Cooker Mexican Lasagna, salad
Wednesday
Taco Soup (replacing the corn with peppers)

Leftovers. Yum!
