Bookworm is finally done with his volunteer opportunities, which means the kids can eat the nut snacks I’ve been making and that are still filling the freezer, so there was no need to make snacks this week.  Instead, I made some muffins, and I bought a lot of grass fed ground beef (on sale at Sprout’s this week) and made several meals for the week.

I also thought I’d try something new this week and add our menu plan on to this post to see how these meals fit into our meal plan.

Meals and Snacks I Made Ahead

Peanut Butter & Jelly Baked Oatmeal Muffins

Oatmeal Muffins

Sloppy Joes (2 meals’ worth)

Meatloaf (2 meals’ worth; I left out the ketchup)

browned 4 pounds of ground beef for future meals

for my lunches this week:  Slow Cooker Red Beans & Rice (4 servings, 3 pts. each)

Monday–Rotisserie Chicken, stuffing mix, mixed veggies

Tuesday–Meatloaf, tater tots, corn

Wednesday–Quesadillas

Thursday–Chicken Taco Soup (0 pts.)

Friday–Chicken BLT Salad
