This post contains affiliate links.  The Armenian cucumbers in my husband’s garden just kept coming, and coming, and coming.  Now, I think the plant is finally starting to die.  No one, except maybe my husband, is sad to see the end of the cucumbers.  Here’s our meal prep & menu plan for September 27 2021 with plenty of cucumber side dishes.

Lunch–Chicken & leftover coleslaw & cauliflower


Dinner–Salmon with Red Pepper Vinagiarette, (from Green Chef)

Wednesday
Lunch–Fish Cakes (from Robin Miller Quick Fix Meals), broccolini, bread & butter
Dinner–Burger, Kale, tomato, summer squash (from Green Chef)

Thursday
Lunch–Chili Verde Soup (using leftover pork)
Dinner–Chicken, Green Beans, Tomatoes (from Green Chef)

Friday
Lunch–leftover fish cakes, butter bread, tomato & cucumber salad
Dinner–Cheeseburger Hamburger Helper (from my last freezer cooking session)
