This post contains affiliate links. My mom and Bookworm came to visit this past weekend. I made spaghetti because it’s Bookworm’s favorite food that I make, even though I just use canned sauce. He says I make it best. Weird. It was good having them here, but it was only a 24 hour visit, so the time went too quickly!
Meal Prep
No meal prep this week besides the food my husband cooks on the weekend. (He always tries to make extra large meals so we have leftovers to eat during the week. I love that he does this, especially now that I’m too busy to do much meal prep.)
Menu Plan
Saturday
Lunch–pizza (the kids were out of the house at an event where there was pizza)
Dinner–Chicken Zucchini Pepper Stir Fry with rice and Miso soup
Sunday
Lunch–Salmon, asparagus, sweet potatoes, and yellow beets and carrots
Dinner–Steak & Pepper Stir Fry, rice
Monday
Lunch–Tuna Melts, carrot slices, chips
Dinner–Costco rotisserie chicken, sweet potatoes,
Tuesday
Lunch–Tostados with refried beans and chicken with salsa and salad
Dinner–Chicken Masala (using this sauce)
Wednesday
Lunch–turkey sandwiches, chips, cucumber slices
Dinner–Pizza with mushrooms and pepperoni
Thursday
Lunch–leftover curry
Dinner–Beefy Kale Soup (from the freezer), bread
Friday
Lunch–Tuna Melts, carrot sticks, chips
Dinner–Spaghetti with Beef & Mushrooms
