This post contains affiliate links.  I was cleaning my pantry and found three small bags of coconut flour that have to be used up, so I made some Coconut Chocolate Chip cookies this week.  The kids aren’t huge coconut fans, but they didn’t complain about the cookies!  Here’s our meal prep & menu plan for October 25 2021:

Lunch–Paleo Chili (I added extra carrots & used one pound of ground chicken and one pound of ground beef)
Dinner–Pork Carnitas,with purple cabbage, tomatoes, and avocado (Wow was this recipe a winner!!)
