This post contains affiliate links.  A few days ago we got a major snow that dumped foot after foot of snow.  This week, we’re hoping for a quiet weather week and warm temps to melt all of the snow!

Here’s our menu plan & meal prep for November 21 2022:

 

Meal Prep

I had a big meal prep, which I hope will make my week easier!  I made

Granola,

Tater Tot Breakfast Casserole,

Zucchini Bread (Recipe coming soon.  It was yummy!)

Beef & Kale Soup,

two pounds of ground beef cooked

Saturday

Lunch–spaghetti with meat & mushrooms,
Dinner–Lemon Basil Skillet Chicken Cutlets, roasted broccoli & carrots (from eMeals’ Paleo plan)

Sunday

Lunch–homemade pepperoni pizza, apple slices, tomato slices
Dinner–rotisserie chicken, miso soup, roasted zucchini slices

Monday

Lunch–Tater tot breakfast casserole, apple slices
Dinner–Tacos, lettuce, tomato, avocado

Tuesday

Lunch–leftover spaghetti, homemade garlic bread
Dinner–Kale, Beef & Tomato Soup (from eMeals’ Paleo plan)

Wednesday

Lunch–the rest of the Tater Tot breakfast casserole, apple slices
Dinner–Ground Beef & Zucchini Soup (from eMeals’ Paleo plan)

Thursday

Lunch–Gluten free, dairy free Thanksgiving dinner
Dinner–leftovers from Thanksgiving

Friday

Thanksgiving Leftovers Diner Style Turkey Sandwich
Lunch–Diner Style Turkey Sandwiches, salad
Dinner–Asian Noodles
