This post contains affiliate links. I have had my new job for about six weeks now, and for four of those weeks, my husband and I took time to meal prep heavily on the weekends. For two weeks, including this past week, we didn’t meal prep, which is always a mistake. While we didn’t go out to eat, we did rely on more convenience foods than I would like. Lesson learned. Here’s our meal prep and menu plan for the week.

Dinner–leftovers from the previous week
Sunday
Lunch–Asian Noodles,
Dinner–Beef Roast, peas, golden beets & carrots
Monday
Lunch–leftover fried rice, gyoza
Dinner–Chicken noodle soup,
Tuesday
Lunch–Daiya burritos, refried beans, cantaloupe
Dinner–Beefy Kale Soup (from my freezer stash)
Wednesday
Lunch–Taco Rice, broccoli (picture taken from a different time)
Dinner–Chili (from my freezer stash), sugar snap peas
Thursday
Lunch–GF Pita Bread Pepperoni Pizza, Broccoli
Dinner–Polish sausage, french fries, mixed veggies
Friday
Lunch–leftover Taco Rice, cucumber slices
Dinner–Corned Beef, Cabbage, Potatoes (This was for St. Patrick’s Day, and the girls made it in a cooking class they’re taking.)
